Well Finals are over and I’m home for Spring Break! My break will be pretty boring, but relaxing. Just home with the family and everyone is either working or at school. But that’s ok! I get to hang around the house with some of my favorite faces.
Twilight. She has a very particular personality and generally just uses us for food and a place to sleep. She’s a very outdoorsy cat and not a big fan of affection. I want to show her love, but she runs away 😦 But she’s a beautiful cat.
Fig is much more affectionate! He’s so sweet and such a happy cat. He’s purring constantly, even when he’s sleeping and is generally pretty hilarious.
Then there’s Mittens! She was my first ever pet that I got when I was 3. She’s 16 now! She’s super sweet, but definitely the queen of the house. She gets what she wants 😉 Anytime you sit down she hops up on your lap like a lightning bolt.
And Charlie. My sweetheart. He’s very shy and has a hard time showing love. He’ll go from purring to biting your finger (not hard of course), but he had a troubled childhood. He wandered into our garage when he was a tiny kitten and was starving! His skin was stretched tight over his bones. My parents used to say he looked like a devil cat. We took him in and fed him and loved him and now he’s a healthy, mostly happy cat.
He’s pretty hilarious. He’s getting up in his years (hence his white beard) but when he was younger he was an oddball. One time we walked into the backyard and found him perched on the corner of the wooden fence, going around our backyard, like a cat! 🙂
So it’s good to be home and surrounded by my animal family ❤
I’m also enjoying having the juicer again! We had a bunch of carrots and greens that needed to be used so I was more than happy to break out the juicer.
Juice: Carrots, mixed kale, chard, and spinach, celery, and a couple fresh strawberries we had in the fridge. Super fresh and refreshing.
Now on to the granola! My dad has been home brewing his own organic beer and there are always a ton of spent grains left over! After browsing around the internet looking for a way to use it someone suggested granola and I jumped at that suggestion. I love homemade granola!
Maple Almond Golden Raisin Spent Grain Granola (Vegan)
5 cups spent grain
1/2 cup Oats
1/2 cup hemp hearts
1/2 cup chopped almonds
4 tbsp pure maple syrup
2 tbsp raw agave
3 tbsp coconut sugar
3 tbsps soy free Earth Balance melted
1 tsp sea salt
Preheat oven to 300.
Combine all ingredients except for raisins in a large bowl.
Spread thin layer on baking sheets and bake for 2-3 hours, until toasty golden.
Remove from oven, stir in raisins, and allow to cool. Stir in airtight container. Enjoy over non dairy yogurt, or with almond milk and fruit, or of course straight from the container.
